Vinécole, the new wine school in the Languedoc-Roussillon near Carcassonne, offers you a selection of inclusive luxury wine and golf holidays in the south of France.

Vinécole is the exciting new wine experience of the Languedoc-Roussillon region in the south of France. Located at the impressive Domaine Gayda near Limoux, this is a school with a difference, set in beautiful surroundings you will learn from your enthusiastic and knowledgeable hosts, Matthew Stubbs MW and Emma Kershaw.

Vinécole has 4 luxury gîtes available on site for our wine and golf clients. All are extremely spacious and are fitted out to the highest modern specifications.

Each gîte has:
2 double bedrooms each with ensuite bathroom
Kitchen area fully equipped with all requisite electrical appliances
Large lounge/dining area
Outside terrace
Liebherr fridge full of wine

To help you further relax, guests also have access to the following facilities:

Brasserie
There is a private brasserie for the use of all those staying in the gîtes. Looking for somewhere to relax after a long day at the golf course or wine tasting? The brasserie has a fully stocked bar with satellite TV, snooker table, piano, large selection of films and deep sofas where you can unwind in complete comfort and seclusion.

Golf:

At Vinécole we are based less than 15 minutes from some of the best golf courses in the south where we can arrange for you to spend a day teeing off on the Carcassonne golf course surrounded by vines, mountains and sunflower fields. Here you will spend a relaxing day enjoying the golf; we will arrange lunch for you at the golf club and then pick you up at the end of the day to take you back to your accommodation and a gastronomic dinner at Maison Gayda.

Situated close to the medieval town, the Carcassonne Golf Club well deserves it's reputation as a course of international standard. Even the most experienced and demanding players will be seduced by the exceptionnal quality of it's fairways and the speed of it's greens. The course has been created using and respecting the manual rolling relief of the terrain, designed with elegance and balance, the magnificent panoramic views giving an extra pleasure and delight. It's 18 holes totalling 5800 metres, with a par of 71, are open all year round

9:15 - 10:30 Tour round vineyards. Planting a vine, rootstocks, trellis v bush vine, canopy, yield, pests/diseases, sunlight/water/heat/nutrients. Organic.
10:30 Coffee
11:00 - 12:00 Winemaking; reception, sorting, white, rosé red, destem v whole bunch, maceration, fermentation, yeasts, temperature, maturation, oak, blend, fining/filtration bottling
12:00 - 12:15 Harvest / Winemaking film
12:30 Lunch
14:00 Blending session. “Create your own blend”.Teams of 4 people. Tasting and judgement of best blend.
15:00 - 15:15 Tea
15:15 - 16:45 Tasting of 8 wines from around the Languedoc/Roussillon. Comparative tasting of Blends. Prize to winner of best blend.
